520 3 _aMoron, a traditional delicacy in the Philippines, is susceptible to spoilage. One of the contributing factors of its spoilage is microbial growth. Many researchers have tried extending the shelf stability of food including the use of chitosan. The use of chitosan against microbial activity is widely documented. This study aimed to isolate and identify two of the causative microorganisms that contributes to the deterioration of Moron and evaluate the efficacy of chitosan as microbial growth inhibitor against the identified microorganisms using the agar well method. The isolated microorganisms from Moron were found to be Bacillus cereus and Fusarium species which are generally dominant in rice-based products and banana wilt disease, respectively. Results also revealed that chitosan is inhibitory against the isolated microorganisms. 1% chitosan was found to be more effective against Bacillus cereusthan the 2% exhibited by the measure of zone of inhibition (10.5mm and 9.5mm, respectively) while 2% chitosan gave a greater zone measure than 1 % against Fusarium sp (14mm and 11mm, respectively).
